Instructions
Peel the potatoes and slice them into halves. Cut them into strips. Soak them into water for 30 minutes.
Coat the potatoes with cornstarch.
Heat oil in a wok and once the oil is smoking hot, add the Potatoes and fry until they get crispy.
Once the potatoes are golden brown and crispy, remove them and keep aside. Keep the leftover oil aside.
In the same pan, add a tablespoon of leftover oil. Add the minced garlic and fry for 30 seconds.
Add the chopped Bell Peppers and Onions and saute over high heat for 2-3 minutes.
Add the vinegar, ketchup, soy sauce and chilli sauce. Toss to combine everything. Add the Potatoes and combine everything well.
Serve hot. Garnish with chopped spring onions or toasted sesame seeds.
