Ingredients
  

  • 4 medium sized Potatoes
  • 2 tbsp Cornstarch
  • 1 medium sized Green Bell Pepper diced
  • 1 medium sized Red Bell Pepper diced
  • 1 medium sized Yellow Bell Pepper diced
  • 2 cups Oil for deep frying
  • 3 cloves Garlic minced
  • 1 medium sized Onion diced
  • ½ tsp Vinegar
  • 1 tbsp Soy Sauce
  • 1 tbsp Green Chilli Sauce
  • 2 tbsp Ketchup

Instructions
 

  • Peel the potatoes and slice them into halves. Cut them into strips. Soak them into water for 30 minutes.
  • Coat the potatoes with cornstarch.
  • Heat oil in a wok and once the oil is smoking hot, add the Potatoes and fry until they get crispy.
  • Once the potatoes are golden brown and crispy, remove them and keep aside. Keep the leftover oil aside.
  • In the same pan, add a tablespoon of leftover oil. Add the minced garlic and fry for 30 seconds.
  • Add the chopped Bell Peppers and Onions and saute over high heat for 2-3 minutes.
  • Add the vinegar, ketchup, soy sauce and chilli sauce. Toss to combine everything. Add the Potatoes and combine everything well.
  • Serve hot. Garnish with chopped spring onions or toasted sesame seeds.
