Ingredients
  

samosa dough

  • 2 cups All Purpose Flour or Maida
  • 1 Teaspoon Carom Seeds or Ajwain
  • 1 Teaspoon Nigella Seeds or Kalonji
  • ½ Tsp Salt or As per requirement
  • Luke Warm Water as per requirement

Samosa Filling

  • 1 Teaspoon Refined Oil/Vegetable Oil
  • ½ Cup Peanuts or Moongfali
  • 1 Teaspoon Cumin Seeds or Jeera
  • 4-5 Cloves Garlic minced
  • 4 Small Green Chilies finely chopped
  • ½ Cup Green Peas
  • Salt as per taste
  • 1 Cup Mashed Potatoes
  • ½ Teaspoon Turmeric Powder or Haldi Powder
  • ½ Teaspoon Red Chili Powder or Lal Mirch Powder
  • 1 Teaspoon Chaat Masala can replace with Amchur Powder or Dry Mango Powder
  • ½ Teaspoon Black Salt or Kala Namak
  • ½ Cup Freshly Chopped Coriander leaves
  • Cup Sweet Corn
  • Ghee to roll the dough and brush on the samosa

Instructions
 

  • In a large bowl mix flour, salt, carom seeds, and nigella seeds. Add a little lukewarm water at a time and make a soft dough. Cover the dough with a lid and allow it to refrigerate for 15-minutes.
  • In a non-stick pan heat some oil. As the oil shimmers, add peanuts. Roast the peanuts on medium-high heat until the sides turn lightly golden brown. Take it out with a spatula and keep it aside.
  • In the same pan add some cumin seeds, minced garlic, and chopped green chilies. Allow the cumin seeds to sizzle on a medium-low flame. As soon as the garlic starts to get light brown on the sides, add green peas and stir well. Cook on low heat for about 1-minutes so that the rawness of green peas goes away.
    Now add Mashed Potatoes with Turmeric Powder, Red chili Powder, Chaat masala, and Black Salt. Stir well to combine. Allow it to get cooked for 2-3 minutes on low heat.
  • Now add finely chopped coriander and sweet corn. Mix well. Take it off the heat and allow the filling to cool down completely.
  • In the work surface, grease ghee. Take out a small portion of the dough and roll it on the greased surface. Roll it in the form of an oval. Now use a kitchen knife to slit it from the center horizontally. Grease the edges with water so that it is easier to seal.
    Make a cone and add the filling. Seal the edges and keep it in your air fryer.
    Grease the samosa on both sides with ghee using a brush and pop it in the air-fryer
  • If your Air-Fryer needs to preheated then preheat it at 200C 392F. Or else just pop it in at 200C for 10-minutes. After 10-minutes flip them over gently using a spatula and allow them to cook for another 2-3 minutes at 200C. When done, serve with tamarind sauce, or ketchup.
