- 250 gm Paneer cut into 1" cubes
- 2 tbsp Ghee
- 1 stick Cinnamon
- 2 pods Green Cardamom
- ½ tsp Whole Cumin
- ½ tsp Whole Cloves
- 1 cup Cashew Nuts
- 1 medium sized Tomato finely chopped
- 2-3 Green Chilis
- 1 inch ginger chopped
- ½ tsp Turmeric Powder
- ½ tsp Red Chili Powder
- ½ tsp Coriander Powder
- ½ tsp Garam Masala
- ¼ cup Fresh Cream
- ½ tsp Kasuri Methi
Heat Ghee in a wok. Add the whole spices, cashew nuts, chopped Tomatoes, green chilis, ginger and saute for 3-4 minutes over medium high heat.
Cool down the mixture and blend into a smooth puree with some water in a high speed blender.
Add some more ghee in the same wok and add the puree. Add Turmeric Powder, Red Chili Powder, Coriander Powder, Garam Masala and Salt. Cook for 2 minutes.
Add the Paneer and some water. Bring the curry to a slow boil.
As the gravy thickens, turn off the heat. Serve in a bowl. Garnish with fresh cream and crushed Kasuri Methi.
