The Inspiration
So, today what happened was that it was already 10:30 in the morning and I had not made any breakfast for myself. I was feeling so hungry and so irritated at the same time. I wasn't feeling like cooking. But, I had to make something. SO, I opened my fridge lazily and saw a big pack of white bread. I thought, why to make that boring sandwich. You know the moment I told myself that I was gonna make something chatpata, it was as if all the neurons in my sleepy brain cells starting firing. I was pumped. I was excited.
So, that's how this idea of making Mini Pizza Pockets was born. I knew the results were gonna be lip-smackingly delicious and turns out I was not wrong at all.
This quick and easy snack made my Monday morning's breakfast - amazing!
How to make these tasty Mini Pizza Pockets?
To make the Filling:
Well to make them first you will need to boil some potatoes. Once your potatoes are boiled you can cool them down and bring them to room temperature. Now mash it up real nice using a fork or a pastry blender.
Now enter the ingredients - First goes in chopped onions, followed by grated carrot, and finally chopped capsicum or green bell pepper. You give all of these a good mix and let them become good friends with mashed potatoes.
Now's the time to add flavor. Salt - the one without whom everything feels dull and boring - starts off the game, followed by Kali Mirch powder or black pepper powder, followed by Oregano - the favorite Italian seasoning which we love to stash at home, and finally some red chili flakes - because without some heat everything is boring! right?
As you have added the masalas or the spices, mix all of them with the veggies and that's your filling for the pizza pocket.
Preparing the Bread:
No open up the bag of bread and grab out as many as you want. Use a butter knife to slice off the brown edges and keep them stacked together.
Making the Pizza Pocket
Now's the time when the real game begins.
Keep two bread side by side or adjacent to each other. On one bread slice, add one spoon of filling and some grated mozzarella cheese.
On the other slice of bread spread some tomato ketchup with the back of a spoon. Now keep this bread with smeared with sauce on the other slice of bread. Press it lightly with your hands.
Soak your hands in water and tap around the edges so as to seal this veg pizza pocket.
Now, heat some oil and fry both sides until lightly golden brown.
Finally serve this with some tomato ketchup or Dhaniya pudina ki chutney.

Other Variations of this Recipe:
- Fresh Coriander - If you have some fresh coriander leaves at home, then chop them up and add it in your filling, It will taste amazing.
- Chaat Masala - If you want to give this recipe a street style fast food like the taste, then try adding some chaat masala. I think about 1 teaspoon would be enough.
- Kala Namak - Adding some Kala Namak or Black salt (just a pinch) would make it tastier.
- Lemon Juice - Squeeze half lemon juice or nimbu ka ras and this shall have that zesty lemony freshness along with added taste.
- Dhaniya Pudina Chutney - Serve with Dhaniya Pudina Chutney and it will taste just like fast food served on the street.
- Curry Leaves - If you don't like coriander leaves, then you can add some curry leaves as well. It will add a distinct taste to this recipe.

Vegetarian Mini Pizza Pockets

Ingredients
- 20 Slices White Bread
- 2 large Potatoes peeled and boiled
- 1 medium-sized Onion finely chopped
- 1 medium-sized Capsicum or Green Bell Pepper finely chopped
- ½ medium-sized Carrot or Gajar grated
- 1 Cup Mozzarella Cheese Shredded at home
- ½ Tsp Salt or Namak or AS PER TASTE
- 1 Tsp Black Pepper Powder (Kali Mirch Powder) or AS PER TASTE
- 1 Tsp Oregano and more for garnish
- 1 Tsp Red Chili Flakes and more for garnish
- 2 Cup Refined Oil for deep frying
- 1 Cup Tomato Ketchup for spreading on bread slice and also serving
Instructions
- First cut two potatoes in half and boil them until they are done in a pressure cooker with some water and salt. Once they are done, transfer them to a colander and run them through cool tap water and then peel them open.In the meantime chop onion and capsicum finely. Also, grate cheese and carrot.Now take a medium-sized bowl and add the boiled potatoes and mash it with a fork or a pastry blender. Add chopped onions, chopped capsicum, and grated carrot. Mix everything well.
- Add salt, black pepper or kali Mirch Powder, Oregano and Red Chili Flakes. Mix it nicely.
- Cut the edges of your bread using a butter knife. Pour a spoonful of the filling on one slice of the bread. Top with some grated mozzarella cheese. And, spread tomato ketchup on the other slice of bread. Top one bread slice over the other. Soak your fingers in water and seal the edges by tapping around the bread. Press it lightly with your palm.
- In a pan pour some oil and heat it up. Once, it is hot, add the pizza pocket - one at a time - and turn it over once it's lightly golden brown. Once both sides have turned golden brown take it out and serve.
- Garnish the pizza pockets with red chili flakes and oregano. Serve with some tomato ketchup.
