Chicken Momo is a classic Indian street-food where you make a filling for the dumpling and then steam it until it gets tender and soft. You can make Veg Momos or Chicken Momos and also many other varieties of Momo.
What is Momo?
Basically, Momo is a sort of steamed dumpling. Where the dumpling is made with Maida or whole wheat flour or rice flour which is also known as Kuttu ka Atta, here in India.
You make the dumplings and then you fold them in a skillfully patterned way. Then you make the filling and fill it in the momos.
The filling can be of paneer, it can be chicken, it can be just veggies.
Momos are generally steamed. But you can also fry them. These days some people like steamed momos and there are a few who love fried Momos.
Whatever kind of Momos you like, this recipe will help you perfect the best Momos at home.
The ingredient for Momos
For the Dough
Refined Flour or Maida - Ideally Momos are made with Rice Flour, but I have made these Chicken Momos with Refined Flour or Maida. Maida will make your Momos soft on the outside and will get cooked very quickly.
Refined Oil - I have used 2 Tablespoons of Refined Oil to make my dough. Refined Flour will make the dough soft and result in soft momos.
Baking Soda - I have used just 1 teaspoon of Baking Soda. This Baking Soda will help momos rise in the steamer and will make them extra soft and delicious.
For the Filling
Chicken Breasts - I have used Boneless Chicken Breasts. I have cut them into small chunks and then used it.
Spices - For Spices, I have used Soy Sauce, Vinegar, Black Pepper, and Salt. These are the only four things that I have used to flavor my Chicken.
How to make the Pleates of the Momos
Making the Pleates, is the most difficult and interesting part of this recipe.
So, you start by starting from one edge. Start making the Pleates and when you reach the other end, fold it and make a swift swirl. This will help seal the top of the Momo.
How to Make Momos Red Chutney?
To make that tasty snacky red wali chutney which is served with momos you need to do this:
- First Boil red chilies and tomatoes. Once they are boiled peel the skin of the tomatoes, cool it down, and blend it with garlic, ginger, sugar, vinegar, black pepper, and soy sauce. Make a smooth paste.
- If you want it spicier then you can add ½ tablespoon of Lal Mirch powder or Red Chili powder while you are making the paste.
- Blend into a paste without adding any water.
