Besan Ladoo - Small, cute and flavorful balls made with gram flour, sugar, ghee, cardamom, cashews, and almonds. Besan Laddu or Besan Ladoo is a sweet that I grew up eating.
In India, we offer ladoos to Lord Hanuman Ji. Especially every Tuesdays. This is a custom that is still prevalent in my home. And, I still remember how my dad used to come home and I used to ask him for Prashad. When he would give me these besan ladoos, I would be so happy! I would ask more from him. He would give me another one. And, then, My mom would come and shout at me for having so much!
Indian desserts are generally made at homes especially during festivals. On occasions like Diwali or Holi, you will see many households making besan ladoos and other varieties of Indian desserts.
This year, for Diwali I decided to make Besan Ke Ladoo. It's been almost 25 years since the time I shared my story with you guys. But, to date, no dessert has taken the place of Besan laddu in my life.
Making Besan Ladoo at home is pretty easy. BUT, you have to very careful about the quantity of ingredients that you use. Especially the ratio of Ingredients is MOST important.
About the Besan in the Besan Ke Ladoos
Generally, people use store-bought besan. But, while making Besan ke ladoo, you should always buy ladoo besan. This is a separate kind of besan (a little coarse in texture) which is ideal for making besan ke ladoo.
In case you are using a smooth and finely powdered besan from the market then you should keep in mind that it will stick in your mouth. Many people don't like that texture. People generally look for a little coarse texture, especially in Besan ladoo.
If you already have a store-bought packet of besan at home, then check its texture. If it feels too smooth to you then use 1 cup and ¾th cup of that besan. And, make a coarse powder of Chickpeas in the food processor or blender.
Add 2-4 tablespoons of this freshly made homemade besan to your store-bought besan. Sieve it with a siever. And, it will be ready for use.

- ½ cup Ghee or Clarified Butter + some more tablespoons
- 1 Cup Demerara Sugar (Coarse Sugar)
- 2 cups of Ladoo Besan
- ½ cup finely chopped nuts
- ½ tsp Cardamom Powder
- Pistachios for Garnish

- 2 cup Ladoo Besan
- ½ cup Ghee 3 tbsp more to be used later
- ½ cup chopped Cashew Nuts and Almonds
- 1 Tsp Cardamom Powder (Elaichi Powder)
- 1 cup Powdered Demerara Sugar or Bura
Instructions
- Heat a Pan and add the Besan. Dry roast the Besan over medium flame for 2-3 minutes.
- Now, add the ½ cup of Ghee and mix well. Stir constantly for about 20 minutes. Keep roasting the Besan for 20 minutes. The Besan is going to get fragrant.After 20 minutes, add 2 tbsp more of Ghee. Mix well with the Besan. Watch how the texture of the Besan changes. It'll start to get thinner. You can add more Ghee if your Besan is still forming clumps.
- Now, add the finely chopped Cashew Nuts and Almonds. Remember to chop the Cashew Nuts and Almonds very finely so that it mixes with the Besan easily.
- Once the Besan is all smooth and liquidy, take it out on a plate. Smoothen out the top with the back of a spatula and allow it to cool down to room temperature for about 30 minutes.
- Add the Sugar and Cardamom Powder. Mix well with the Besan and make Ladoos.
- Once the Ladoos are prepared, top them with chopped pistachios and serve.

Notes
- Use Ladoo Besan for the better texture of the Ladoos. Do not use regular Besan. If you have no other option, then grind some Chickpeas in a food processor until it gets coarse and mix with the Besan.
- Remember to Roast the Besan and then use it. Roasting the Besan will make it more flavorful. Also, if your Besan is too old, roasting it and then using it will get rid of the stale smell.
- Be very patient while roasting the besan with Ghee. This will take time. All you need is some Patience to get the right consistency of the Besan.
- If your Besan needs more ghee while making the Ladoos, then apply some Ghee on your Palms and then make the Ladoos.
