I am so proud to tell you guys that Samosa is not just limited to being a popular Indian snack! In fact, Samosa is also a favorite Snack in Europe (especially the UK), and America. Well, today, we are gonna learn how to make samosa but it won't be deep-fried, and neither will it be baked. We are gonna make samosa in Air-Fryer.
Air Fryer happens to be one of the MOST exciting Kitchen Gadgets that you can think about adding to your kitchen. Until I bought an Air-Fryer I was under the impression that food that is cooked in Air-Fryer, apparently tastes "dull" and "boring". Someone even warned me before buying it saying, "you won't like it." Thank God! I DIDN'T listen to them. In fact, I gave them these samosas and for a minute they couldn't believe that it is made in an Air-fryer.
Deep-Fried Samosa Vs Air-Fried Samosa
Deep-Fried samosas taste good. In fact, we have all been brought up in Indian society, where we are made to believe that deep-fried food though unhealthy, tastes the best. Well, that is so not true. Baked Samosa and Air-Fryer Samosas are not less in any manner. In fact, I would say, they are a better choice, in fact, a healthier choice today. It tastes so good. A crispy coating with a spicy filling is just the sort of thing that you would need with your evening tea.
So, without further ado, let's make Samosa in Air-fryer.
Tips to Make Air-Fryer Samosas Effectively:
- Timing: As a newbie one of the major things that I struggle with is the timing and temperature of my Air-Fryer. The thing that I learned is that every Air-Fryer works differently. It basically depends on the type of Air-Fryer. If you are using a 1400watt air fryer then you'll need about 10-minutes. If you are using a 1700 watt air-fryer then you will need even less time. So, before you begin the recipe, you should definitely check that about your Air-Fryer.
- Filling: While cooking what do you think is that one thing that steers your recipe in the right direction? Well, according to me - it is tasting. When I tasted my samosa filling it lacked salt. So, I balanced it out with some more salt. The filling shouldn't be too spicy but it should have that refreshing "chatpata" taste. So, balance the spices accordingly.
- Brushing Ghee: Before you place the Samosa in the Air-Fryer do not forget about brushing ghee on each of the samosas. When you brush ghee and then put it in the Air-Fryer, they beautifully crispy on the outside, just the way we want.
- Flipping: Many a time, we just pop things in the Air-Fryer and forget about it. Well, while we are making Samosas in Air-Fryer we certainly cannot afford to do that. So, after one side gets done, make sure you flip it over and allow the other side to get cooked as well.
- Resting the Dough: Make sure you rest the dough for at least 15-minutes before you use it further.
Things that You Should be Careful Of:
- Keeping it for Too Long: Sometimes, we keep the samosas in the air-fryer for too long in the hope that the outer skin will be brown (just like it is deep-fried). But, while you are making samosas in Air-Fryer you should keep in mind that you won't get that dark brown color, though it will be partially brown but completely cooked. When you keep it in the air-fryer for too long, the outer skin gets overcooked and gets too hard. We certainly do not want that.
- The texture of Samosa Dough: Your dough shouldn't be too stiff and neither should it be too pliable. It should be soft to touch. I would highly recommend you to watch the video below for a better understanding.
- Rolling the Dough: While rolling the dough, DO NOT FLOUR THE SURFACE. Rather grease "Ghee" on the surface. While rolling the dough, DO NOT ROLL IT TOO THIN. In case you have rolled it too thin, grab it together and start over once again.
- Making the Samosa: While making the samosa, try to add in as much filling as possible. A Samosa with more filling tastes so much better than less filling. Also, when you are folding the samosa, try to go as easy with the dough as possible. Just gently fold it and it will be done.
How to make Samosa in Air-Fryer
- The first step is to make the Dough: Just mix Flour, Carom Seeds, Nigella Seeds, and Ghee with a little lukewarm water. While making the dough, make sure you do not over-knead the dough. Just knead it enough and give it some time to rest. Allowing the dough to rest is super important.
- Secondly, roast some Peanuts: If you are allergic to peanuts you can skip this step. But, do not use peanuts as it is. Roasting the peanuts helps them taste better. Roasted peanuts have that nutty taste which feels really good in a Samosa.
- Now make the Samosa Filling: For the Filling just heat some oil in a pan. As the oil shimmers, add Jeera (Cumin Seeds), Chopped Green Chilies, and minced garlic. Allow the garlic to get slightly brown. Garlic will help get the oil flavored. If you want to make it without garlic, you can even skip it. Into this add green peas and salt. Stir well.
- Now, add boiled and mashed potatoes. Along with the spices. We'll be using turmeric Powder, Red chili powder, chaat masala, and Black Salt. Stir well and allow this to get cooked completely.
- Finally, add a cup of chopped coriander/cilantro along with some sweet corn. Mix well and take it off the heat. Allow this samosa filling to cool down completely.
- Roll the dough on a surface greased with ghee. Then cut it from the center. Now water the edges so that it helps you stick. Add the filling and make a cone. Seal the edges and place it in your air-fryer. Grease the samosa with ghee on both sides and allow it to get cooked in the Air-Fryer at 200C for 5-7 minutes. Flip it over and cook the other side at 200C for 2-3 minutes.
- Finally, Serve it with some Imli Chutney or Dhaniya Pudina Chutney or Tomato Ketchup and enjoy it with a cup of steaming hot tea.

Easy Samosa Recipe in Air Fryer
Equipment
- Air-fryer
Ingredients
samosa dough
- 2 cups All Purpose Flour or Maida
- 1 Teaspoon Carom Seeds or Ajwain
- 1 Teaspoon Nigella Seeds or Kalonji
- ½ Tsp Salt or As per requirement
- Luke Warm Water as per requirement
Samosa Filling
- 1 Teaspoon Refined Oil/Vegetable Oil
- ½ Cup Peanuts or Moongfali
- 1 Teaspoon Cumin Seeds or Jeera
- 4-5 Cloves Garlic minced
- 4 Small Green Chilies finely chopped
- ½ Cup Green Peas
- Salt as per taste
- 1 Cup Mashed Potatoes
- ½ Teaspoon Turmeric Powder or Haldi Powder
- ½ Teaspoon Red Chili Powder or Lal Mirch Powder
- 1 Teaspoon Chaat Masala can replace with Amchur Powder or Dry Mango Powder
- ½ Teaspoon Black Salt or Kala Namak
- ½ Cup Freshly Chopped Coriander leaves
- ⅕ Cup Sweet Corn
- Ghee to roll the dough and brush on the samosa
Instructions
- In a large bowl mix flour, salt, carom seeds, and nigella seeds. Add a little lukewarm water at a time and make a soft dough. Cover the dough with a lid and allow it to refrigerate for 15-minutes.
- In a non-stick pan heat some oil. As the oil shimmers, add peanuts. Roast the peanuts on medium-high heat until the sides turn lightly golden brown. Take it out with a spatula and keep it aside.
- In the same pan add some cumin seeds, minced garlic, and chopped green chilies. Allow the cumin seeds to sizzle on a medium-low flame. As soon as the garlic starts to get light brown on the sides, add green peas and stir well. Cook on low heat for about 1-minutes so that the rawness of green peas goes away.Now add Mashed Potatoes with Turmeric Powder, Red chili Powder, Chaat masala, and Black Salt. Stir well to combine. Allow it to get cooked for 2-3 minutes on low heat.
- Now add finely chopped coriander and sweet corn. Mix well. Take it off the heat and allow the filling to cool down completely.
- In the work surface, grease ghee. Take out a small portion of the dough and roll it on the greased surface. Roll it in the form of an oval. Now use a kitchen knife to slit it from the center horizontally. Grease the edges with water so that it is easier to seal.Make a cone and add the filling. Seal the edges and keep it in your air fryer. Grease the samosa on both sides with ghee using a brush and pop it in the air-fryer
- If your Air-Fryer needs to preheated then preheat it at 200C 392F. Or else just pop it in at 200C for 10-minutes. After 10-minutes flip them over gently using a spatula and allow them to cook for another 2-3 minutes at 200C. When done, serve with tamarind sauce, or ketchup.
