Ingredients needed to make Hot and Sour Soup
- Veggies - Chopped Green Chilis, Ginger, Garlic, Carrots, Green Beans, Cabbage, Green Onions.
- Sauce - Vinegar, Soy Sauce, Tomato Ketchup, Chili Sauce
- Cornstarch Slurry - 1 Tbsp of Cornstarch with 2 Tbsp of Cold Water.
- 1 Tsp Refined Oil to cook the Veggies
- 4 cups of water to make the soup.
- For Chili Oil - Refined Oil, Red Chili Powder & Dried Whole Red Chilis.
How to make Hot and Sour Soup
- Fry the Veggies - Heat Refined oil in a pot. As the oil shimmers, add the green chilis, minced garlic, and chopped ginger. Add the finely chopped Carrots, Green Beans, and Cabbage. Season with salt & pepper. Saute for 2-3 minutes just until the veggies tenderizes. Add water and cover cook for 2-3 minutes.
- Add the sauces- Add the sauces- Vinegar, Soy Sauce, Chili Sauce & Tomato Ketchup. Stir to combine. Allow the soup to come to a slow boil.
- Add the Cornstarch Slurry - Make Cornstarch Slurry by combing 1 Tbsp of Cornstarch with 2 tbsp of Cold Water. Stir until smooth and pour in the cooking soup, stirring constantly with a spatula. (Do not Pour the Cornstarch Slurry, ahead or without stirring. It will harden up into a lump)
- Season - Season with Salt & Pepper.
- Make Chili Oil - Heat Refined oil in a pan. As the oil gets hot, add the red chili powder & whole red chilis. After just about 2 minutes, as the oil gets flavored with the chili, remove the Red Chili and Pour the Chili Oil over the served soup.
- Top with chopped Spring Onions.
- Serve!
Tips to make the best Hot and Sour Soup
- Chop the Veggies finely. This Soup is known for the veggies which are very finely chopped. Do not add a lot of Veggies.
- Add the Cornstarch Slurry after the Soup is cooked. Stir constantly so that the Soup thickens.
- Serve this Soup hot. If you want to make it ahead of time, then make the whole soup, just add the Cornstarch slurry later. Stir it in hot soup and then serve with Chili Oil on top.

- Dutch oven or Soup Pot
Ingredients
- 2-3 whole Green Chilis chopped
- 6-7 cloves Garlic minced
- ½ inch Ginger chopped finely
- 1 medium sized Carrot finely chopped
- 5-10 whole Green Beans finely chopped
- ½ size Cabbage finely chopped
- 4 cups Water
- 2 Tbsp Vinegar
- 2 Tbsp Soy Sauce
- 2 Tbsp Chili Sauce
- 1 Tbsp Tomato Ketchup
- salt & pepper to season
- 1 stalk Spring Onion finely chopped
- 1 Tbsp Cornstarch
Chili Oil
- 1 Tsp Refined Oil
- 1 Tsp Red Chili Powder
- 2 whole Dried Red Chilis
Instructions
- Heat refined oil in a pot. As the oil heats add the chopped green chilis, garlic, and ginger. Add the chopped Carrots, Green Beans, and Cabbage. Saute for 2-3 minutes. Add the water and cover cook for 5 minutes.
- Add the Vinegar, Soy Sauce, Chili Sauce & Tomato Ketchup. Stir to combine.
- Make Cornstarch slurry by combining 1 Tbsp of Cornstarch with 2 Tbsp of Coldwater. Stir to combine. Pour it in the soup, stirring constantly.
- Make Chili Oil by heating Refined oil in a Pan. As the oil gets hot, add the Red Chili Powder & Whole Dried Red Chilis. After 2 minutes, as the oil gets flavored, remove the Chili and pour it over the soup. Garnish with finely chopped Spring onions
- Serve this soup hot.
