What is Shahi Tukda
Shahi Tukda is a traditional Nawabi or Mughlai delicacy that traces its origin back to Pakistan. Although, this cannot be officially confirmed.
Whoever, invented this was a genius. So, What is Shahi tukda?
The word Shahi means "royal" in English. And the word "Tukda" means "a piece". So, if you see - Shahi Tukda means - "The Royal Piece" in English.
The sweet is just like its name. It's basically a piece of bread which is fried in ghee and then served over "Rabri" with pistachios and other dry fruits garnished on top.
When Do you Make Shahi Tukda
India is a nation of festivals. In our country, whenever, there is some festival such as Raksha Bandhan or Diwali or Holi we make Shahi Tukda.
Ingredients
FOR THE RABRI
- ½ litre Full cream Milk
- 10 whole Almonds
- 1 Tbsp Sauf
- 4 whole Choti Elaichi
- 2 cups Sugar
- 1 cup Milk Powder 80gms
- 2 large Mangoes pureed
FOR THE SUGAR SYRUP (Chashni)
- 2 cups Sugar
- 1 cup Water
- 3-4 strands Saffron (Kesar)
FOR THE SHAHI TUKDA
- 5-6 LARGE Bread halved
- 3 Tbsp Ghee
- ½ cup Pistachios finely chopped (for garnish)
- Mango slices for garnish

Instructions
- Bring a pot of milk to simmer and reduce it to half. Cook over medium-high heat for 10-15 minutes.
- Make a powder of Almonds, Fennel Seeds (Sauf), and Green Cardamoms (Choti Elaichi). Mix this mixture in the milk. Add sugar and milk powder to the milk. Toss to combine and melt the sugar. Allow it to reduce for another 10-minutes. After the Rabri is made, allow it to cool down to room temperature.
- Make sugar syrup by melting sugar in a pan. Add water to it and make sugar syrup. Add saffron strands and stir until combined. When one string of sugar syrup is formed, take it out in a bowl and keep it aside.
- Slice the bread into four halves. Heat Ghee in a pan. As the Ghee gets hot, add the bread slices to the Pan and toast them until golden brown on both sides.
- Mix Mango Puree with the cooled Rabri. Stir until combined
- Arrange the Bread in a serving bowl. Garnish with the Mango Rabri. Garnish with Mango slices, chopped Pistachios, and Rose Petals (if using). Serve.
Variations
- Other Fruits - Besides Mango, you can use any other fruits like Apples or Guava or Peaches to make Shahi Tukda
Storage
Store leftover Shahi Tukda in an airtight container in the refrigerator. The longer you store Shahi Tukda, the better it tastes!
Shahi Tukda don't stand up well to freezing.
